Your Guide to Gourmet Mushrooms in Denver: FAQs & Tips

Curious about cooking with gourmet mushrooms like Lion’s Mane, Shiitake, and Oyster? Our FAQ covers everything — from storage tips and cooking ideas to tinctures, wholesale, and where to buy the freshest local mushrooms in Denver and Colorado farmers markets.
What can we make with these mushrooms?
Pastas, Pizzas, stir fries, risotto, stroganoff, in your omelettes or eggs, ramen, mushroom toast, sandwiches, fried “chicken”
How long do your mushrooms last and how do you store them?
5-7 days, some strains upwards of 10 days. Place your mushrooms in a bowl or tupperware with no lid, and place a damp paper towel or cloth over the top. Re-dampen towel as needed, this will keep your mushrooms moist and fresh.
Are these foraged or cultivated? From where?
We grow everything we sell right here in Denver, CO in our outfitted three car garage. We do not do any foraging(hint: that means no morels!!)
Do you wholesale?
We offer wholesale pricing based on the quantity ordered, with a minimum order of 10# per week. Please reach out via email for more information.
How much of the mushrooms do you cut off?
“If its hard must discard!” – you can off off any remaining substrate (the brown crumbly growing material at bottom) and and part that appears hard or chewy; you can save for stock if you make it!
Can I eat them raw?
We do not recommend eating our mushrooms raw: all mushrooms have a hard cell-wall, made of chitin (the same material as crab shells, lobster shells, fingernails, etc) that can upset the stomach when eating raw, and impacts our ability to absorb other nutrients until it is broken down. We recommend cooking all mushrooms even just for a minute or two to break down the cell wall, making the nutrients more easy to absorb and the belly less irritated.
What is a tincture and how do I use it?
A tincture is a mushroom extract that we make by growing the mushrooms, extracting them in water for 12 hours, and in alcohol for six weeks before bottling. This gives you the ability to take one to two ml per day for their medicinal purposes, rather than having to eat mushrooms every day.
How do I clean them?
We do not grow our product in the dirt- we grow in sawdust and soy bean shells, thus we don’t find our mushrooms to be “dirty.” However, if you would like to clean them, we recommend gently wiping any debris with a wet paper towel, trying not to soak the mushroom.
Any psychedelics?
At this time, Furst Class Fungi does not grow any psychedelic mushrooms, and focuses rather only on gourmet mushrooms for cooking and health purposes only.
Where can I buy your mushrooms? Do you have a storefront?
At this time we do not have a storefront! You can find us at farmers markets every weekend from May through November. In our off season, we run a Winter CSA/Subscription program that runs January through April that offers a weekly or biweekly order with pickup and delivery options.
Do you ship?
Unfortunately due to the delicate and humidity-loving nature of our mushrooms, as well as our dedication to freshness, we do not ship.
ARE YOU A FUN GUY?
Definitely
