Lion’s Mane

Studied widely for its effects on brain health, neuroplasticity and memory retention. High in antioxidants, anti-inflammatory properties, and vitamin D. King trumpets are our favorite mushroom to use as a meat replacement; try it out with vegan king trumpet scallops, shredded for a pulled pork substitute or sliced lengthwise for mushroom steaks on the grill!

Blue Oyster

Good source of vitamin D and B. Studies show adding oysters to your diet can lower cholesterol and improve liver health. King Trumpet

High in vitamin D and B and antioxidants. Research has shown king trumpet mushrooms to have anti-cancer properties. King trumpets are our favorite mushroom to use as a meat replacement; try it out with vegan king trumpet scallops, shredded for a pulled pork substitute or sliced lengthwise for mushroom steaks on the grill!

Piopinno

Piopinno or “velvet piopinni” or “Poplar” mushrooms are an immune boosting fungi common in Italian dishes including pastas and risottos.. They have a slightly nutty flavor and offer a more
complex texture due to their velvety cap, but stringier, asparagus-like stem. Some research finds piopinni to be helpful in reversing osteoporosis as well as high in antioxidants.

Black Pearl

Black Pearl mushrooms are an oyster mushroom presenting as less dense than king trumpet mushrooms, but still a meatier version than a white or blue oyster. Black Pearls are extremely nutrient dense with a slight umami flavor. A great mushroom for any mushroom lover, with their chewier, marshmallow like texture.

Chestnut

Chestnut mushrooms, like their name suggests, have a nutty flavor, and are similar to cremini mushrooms with longer stems; They have been studied widely for their anti-bacterial and immune boosting properties. Great in all types of cooking, but used commonly in Asian and Italian dishes.

White Oyster

White Oyster mushrooms are slightly less delicate than blue oysters in the cap with a powerful umami flavor. They cook down to a tender calamari-like texture, but remain delicate. More of the stem is used than other oyster mushrooms, as the gills extend further down the stem, giving you more mushroom to work with. Studied for their anti-inflammatory, blood sugar controlling and anti-cancer properties.

Reishi

Reishi mushrooms are beneficial for overall nervous and immune system health; Research shows effects of their calming, anti-anxiety, stress reducers and sleep improvers. This mushroom is commonly used in tinctures, teas, and supplements.
